TiraMi~LoveS~U Recipe!

Here's a recipe I want to share with you! I was on the hunt for the perfect tiramisu recipe and then stumbled upon this non-chocolate tiramisu with strawberries and rasberries! (below the recipe in Dutch for my lovely Dutch readers!)

Makes 8 servings
25min to make + 2hours to chill

Ingredients:
1 1/2 pound strawberries, crowns removed
1 pack rasberries (0.276pound)
1/3 cup powdered sugar
2 vanilla pods
250 ml whipping cream
0/5 pound mascarpone cheese
300ml dessert wine / muscat wine
30 (about) ladyfingers

glass bowl 8" x 6"
optional: 2 teaspoons of cocoa powder

1) Puree with mixer half of the strawberries with 2tablespoons of sugar. Halve the other strawberries and sprinkle with 2tablespoons of sugar.
2) Beat whipping cream. Halve the vanilla pods. Stir the mascarpone, 2tablespoons of wine, vanilla and most of the sugar. Stir whipped cream into the mascarpone mixture to lighten.
3) Arrange half of the ladyfingers over bottom of dish. Sprinkle with 150ml wine and spoon half of the mascarpone mixture evenly over ladyfingers. Cover with strawberry puree. Repeat layers ladyfingers, wine & mascarpone mixture. To finish, cover with remaining strawberries and rasberries.
Cover and refrigerate for at least 2hours.
4) If desired, sift cocoa powder over top when serving. Serve immediately.

The translation for tiramisu is "carry me up". After just one bite of this delightful strawberry version, you'll understand why many assume the unspoken words must surely be "to heaven".

25min + 2uur wachttijd

Ingredienten:
1bak aardbeien (500g), kroontjes verwijderd
100 g poedersuiker + 4el extra
250ml slagroom
2 vanillestokjes
250g mascarpone
300ml dessertwijn
30 lange vingers (ongeveer)
125g frambozen
staafmixer
glazen schaal 20 x 15 cm
optioneel: 2teelepels cacaopoeder

1) Pureer met de staafmixer de helft van de aardbeien met 2el suiker. Halveer de andere aardbeien en bestrooi met 2el suiker.
2) Klop de slagroom stijf. Halveer de vanilletokjes in de lengte en schraap het merg eruit. Roer de mascarpone los met 2el wijn, het merg en 100g suiker. Spatel de slagroom erdoor.
3) Verdeel de helft van de lange vingers over de schaal. Besprenkel met 150ml wijn en verdeel de helft van het mascarponemengsel erover. Schep de aardbeipuree erop, dek af met de overige lange vingers en besprenkel met wijn. Verdeel de rest van het mascarponemengsel, de aardbeien en frambozen erover. Dek af en zet minimaal 2uur in de koelkast.
4) Indien gewenst, cacaopoeder over de tiramisu sprenkelen vlak voor het opdienen.
